Haskap Cheesecake Bites

Sweet Prairie Haskap™ Cheesecake Bites

A simple, creamy bite size cheesecake recipe with a reduction of Haskap Berry Juice!

Ingredients

  • 1 Pint Each of Market Fresh Blueberries & Raspberries (sub any berry)

  • 1 Organic Clover Heavy Whipping Cream

  • 1 Organic Clover Whipped Cream

  • 1 Graham Cracker package

  • 1/4 cup Miyokos Sweet Oatmilk Butter

  • Sweet Prairie Haskap™ Reduction (see below)

Directions (3 Parts)

Part 01 - Sweet Prairie Haskap™ Reduction

  • 1 cup sugar

  • Lemon peel (1tsp)

  • 1 tsp Vanilla extract

  • Combine all ingredients

  • Reduce on stove top until thickens

  • Cool before use

Part 03 - Whipped Cream and Assembly

  • Whip refrigerated cream until stiff peaks start to form

  • Carefully fold in Sweet Prairie Haskap™ Reduction

  • Add a generous amount of whipped cream and continue to incorporate into mix.

  • Spoon cream mix onto the graham crust until full.

  • Refrigerate for at least 1 hour to harden. Top with organic sweetened whipped cream. Garnish with berries.

Part 02 - Graham Cracker Crust

  • Ground the graham cracker in food processor.

  • Melt butter and pour into graham crumble bowl to create the bottom crust.

  • Spoon butter /graham mixture into muffin tin wells 1/3 of the way.

  • Set aside.
